and then bacon (variants are salmon or spinach (which is eggs florentine) and nom)
and then poached egg

and then

hollandaise sauce. the most magical of sauces. its pretty much butter and lemon

Eggs Benedict is two halves of an English muffin, topped with Canadian bacon, poached eggs and Hollandaise sauce. At least that's the basic set-up - there are a lot of variations.

We use puff pastry where I work, and no one bats an eye, tho I'd suggest using something better suited to mopping up the sauce and yolk.

I have never had eggs benedict. I like mine scrambled with cheese or in the form of an omelet.

Man i love breakfast foods but for actual breakfast-time I am a devotee of steel-cut oats in the crockpot overnight. Like, this is my every-day routine, to the point where I can stumble home drunk at 3 am and still manage to set it up. Idek. OATMEAL.

Also I've worked a fair amount of brunch shifts and my main feeling, aside from FUCK YOUR BOULANGERIE BASKET (they take, like, an infinite time to assemble, esp when everything else is going tits over pinapple) is hollandaise sauce kind of grosses me out. Like, the eggs benedict looks great, esp the salmon one we do, and then the hollandaise sauce goes on and I am all ohhhhhhhh nooooooo.

Is it the taste/texture or the idea? My mom hated eggs due to the fact of what they are, I am not so afflicted but the taste (moreso in cheap ones) will occasionally put me off.

I am mostly impressed at all the things an egg can do. I mean, merengues, seriously, what even is that.
